Sbraga out, Vetri in as ‘culinary adviser’ at the private Fitler Club

The members-only Fitler Club in Center City has announced that Kevin Sbraga has left as culinary director and has been replaced by Marc Vetri, ending rumors that began spreading shortly after the openings of the Fitler’s restaurants in late March.

The move reunites Vetri with Jeff Benjamin, Fitler’s executive vice president. Both men own the Vetri Cucina restaurants in Center City and Las Vegas. Vetri’s title is culinary adviser. As such, Vetri told me, he oversees the Fitler Club’s kitchens that are being run day by day by Andrew Campisi, who was a chef at Osteria when both Vetri and Benjamin owned it.

Sbraga, who did not return messages Tuesday night seeking comment, left to pursue other interests, the club said in a statement.

Sbraga, who won Bravo’s Top Chef in 2010 and for a span of about five years opened and closed five restaurants, joined the project early on, in mid-2017, as it was under construction at 2400 Market St. The Fitler Club shares the building on the bank of the Schuylkill with Aramark’s headquarters.

The club,, whose amenities include 14 hotel rooms open to the public (at $450 to $1,050 a night), gyms, meeting and event space, has elements of Soho House. It was created by Michael Forman and hotel financier David Gutstadt, and its membership skews younger than, say, the Union League.
