Healthy family recipe: Marinated strawberries with mint whipped cream

As we break into warm days, switch out heavy cakes and pies for this fresh fruit dessert. Homemade whipped cream adds just a touch of sweetness atop fresh cut strawberries. Although our version contains a bit more fat than a typical tub whipping topping, there are no additional fillers such as hydrogenated oils and trans fats or artificial colors that you find in the packaged versions. Serve this recipe as a special occasional treat for the spring holidays.
Marinated Strawberries with Mint Whipped Cream
Ingredients:
1 pound fresh strawberries
1 tablespoon of granulated sugar
¼ cup heavy cream
3 tablespoons fresh mint leaves, chopped
Directions:
1. Wash the strawberries and remove the green stem. Cut strawberries into quarters. Set aside in a bowl.
2. Place the heavy cream, sugar, and mint into a bowl. Mix by hand with a whisk for 5-6 minutes until thickened and soft peaks form. (Note: as an alternative, you may also mix using an electronic hand mixer).
3. Divide into 4 servings and top with whipped cream
1 serving = 1 cup of strawberries and 1 ½ tablespoons of whipped cream
