In a state of small producers whose cheeses are rarely seen beyond New England, Hahn may be the most reclusive. Luckily, Portland cheesemonger Kris Horton carries a selection of Hahn's wares (and those of other Maine producers) at her shop, and she's eager to ship and spread the word: Maine deserves to be on the great American cheese map.
