Owner and pizzaiolo Speer Madanat has a clear vision for his pies: a well-done, blistered crust, with an assertive, Jersey tomato-based sauce, two different mozzarellas with a sprinkling of umami-packed Grana Padano at the end. His fanaticism in executing that vision across every single pie results in what are likely the very best pizzas in a region with no shortage of contenders.
