Chef chat: New hands at Talula's Garden and Mainland Inn

Jeremy McMillan - most recently chef at Bedford Post in Upstate New York - begins April 14 after an immersion at Talula's Table in Kennet Square and a tour of the farms that owner Aimee Olexy works with. He will replace Sean McPaul, who has been commuting to New York to see his girlfriend, a ballerina.

Change is coming to the kitchens at Talula's Garden and its offshoot Talula's Daily on Washington Square.

Jeremy McMillan - most recently chef at Bedford Post in Upstate New York - begins April 14 after an immersion at Talula's Table in Kennet Square and a tour of the farms that owner Aimee Olexy works with. He will replace Sean McPaul, who will relocate to New York. He has been commuting because his girlfriend is a ballerina.

Olexy says that at Bedford Post, McMillan embraced cooking vegetables, pure eating, healthy cooking, menu seasonality and such. She says he impressed her with "light, delicate, healthy pastas, vegetarian dishes, and pure, simple roasted fish and meats."

The rest of the kitchen - including Daily chef de cuisine Scott Megill - remains intact.

In other news... The Mainland Inn in central Montgomery County - which was supposed to reopen last fall after a big renovation - is indeed coming back, says co-owner Sloane Six.

Late spring, we can expect a reopening, and the chef will be Ezra Duker, Philly-born alum hotshot whose resume includes French Laundry, Morimoto Napa, The Truffle Pig in Steamboat, Colo., and Block 16 in Vail, Colo.
