Pastry chef Monica Glass returns, lands with Sbraga

She's adding her desserts to Kevin Sbraga's menus at Sbraga as well as at Juniper Commons and The Fat Ham.

Saying she had gone as far as she could go at a restaurant group in Boston, pastry chef Monica Glass has returned to Philadelphia after two years.

The West Chester-raised Glass is now executive pastry chef at Sbraga, which means she's adding her desserts to Kevin Sbraga's menus at Sbraga as well as at Juniper Commons and The Fat Ham.

Glass was executive pastry chef at 10 Arts during its Eric Ripert/Jennifer Carroll days. She then went on to the late Fish. In Boston, she was executive pastry chef for Ken Oringer at Clio and Uni.

Her Sbraga dessert menu includes such wows as fermented banana paired with caramelized coconut; house made sorbets with flavors of banana and cucumber, and a honeysuckle Parfait.

Diagnosed with celiac disease, Glass makes sure there are gluten-free offerings not only on the sweet side but in the bread basket.
