Square 1682's menus

The Hotel Palomar's bistro will open Oct. 14.

Getting menus has been like pulling teeth, but at least here's the dinner menu for Square 1682.

The Art Deco-style, two-level bistro opens for dinner Wednesday (10/14) -- and for breakfast the next day -- at Kimpton's new, eco-friendly Hotel Palomar at 17th and Sansom Streets. Lunch will start Oct. 26.

Chef Guillermo Tellez, a native of central Mexico, worked for Charlie Trotter for 17 years, including time as chef de cuisine.

At Square 1682 -- named after the year of Philly's founding -- he's doing ambitious new-American cuisine with more than just a passing nod to local farmers and purveyors. He has a roster of 40 of 'em stocking his larder. He dealt with them at his previous stop as a co-owner of Northbrook MarketPlace in Chester County. Tellez was brought here to work for Starr Restaurant Organization (director of menu development, exec chef of Striped Bass).

Dude makes his own pickles, too.

Tellez says his menus won't borrow from his days with Trotter, though check out the vegetable lasagna, a riot of veggies and no pasta separating the layers.
