Stockyard: Farm-to-table sandwiches in Spring Garden

Oct. 10 is the target for the opening of Stockyard Sandwich Co., a chef-run sandwich specialist at 1541 Spring Garden St. (215-977-9273), whose seasonal menu will follow the farm-to-table, nose-to-tail ethos.
In other words, house-made bacon, sausage, and pastrami, with salad ingredients from local farmers. Menu, covering breakfast and the rest of the day, is on the website.
Chefs Mike Metzger and William Lindsay worked together at White Dog Cafe in University City. Metzger's resume also includes Pumpkin and Kensington Quarters, while Lindsay's includes Mercato, Travinia, and Morimoto.
At the White Dog, they marveled at what Metzger calls "the little pots of stuff left over from the night of service," such as braised beef. "We used to say, 'Can you imagine getting a sandwich like that?'"
After what Metzger called "one night of drinking," they decided to stop working for other people. They found the former copy shop a few doors from Kelliann's Bar and near Community College of Philadelphia, and set to work converting it into a restaurant - a process that took many months.
Hours will be 7 a.m. to 10 p.m. Monday to Saturday.
