The bun also rises: A burger with peanut butter and onion, inspired by Hemingway
Ernest Hemingway enjoyed peanut butter and onion sandwiches on white bread. Raise your eyebrows and scoff, but - breath implications aside - seriously consider this combination.
Ernest Hemingway enjoyed peanut butter and onion sandwiches on white bread.
Raise your eyebrows and scoff, but - breath implications aside - consider this combination: the saltiness and texture of the peanut butter amped by the bitter pungency of the onion slices. In Islands in the Stream, Hemingway dubbed it the Mount Everest Special - "for commanders only."
When Geoff Molt was devising the extensive burger menu for Ambler Feedstore, his sandwich shop, he riffed on the idea of a burger incorporating PB&O.
What to name it? "The Old Man and the Sea Salt"? No, the Mount Ambler Special, for commanders only.
It's a six-ounce patty of Black Angus chuck topped with bacon, creamy peanut butter, dry-roasted peanuts, sliced red onion, and dill pickle chips, assembled on a sesame brioche from Baker Street in Chestnut Hill.
As you bite, the peanuts provide crunch as the onion and peanut butter play off the saltiness of the pickles and the juiciness of the burger.
There you have it: A Moveable Feast. To have and have nut.
