Tucked into a buzzing stretch of West Chester otherwise lined with pubs and generic New American restaurants, Andiario signals fine dining, with white tablecloths and a careful wine list. But the kitchen accommodations — crates of tomatoes on the windowsill, bunches of fresh oregano drying over the dining room, a larder filled with ferments and preserves — reveal just how dedicated chef Anthony Andiario is to culinary experimentation. With ample portions and rustic plating, you won’t find microgreens or kitchen tweezers here, but the cooking, which is underlined by whole animal butchery, handmade pasta, and bread fresh from its own bakery, is precise and sophisticated, and easily warrants the hour-plus drive from Center City.
